This is true. The reason for the high cholesterol is the myelin covering of neurons in white matter, which is made of fat. This is probably cultural, but the prospect of eating brains grosses me out big time.
I’d grownup in a rural area. my father always roasted pork brain in pan when we butchered a pig. But again my father was born 1936 and grown up in after war germany. I think there you learned to eat everthing.

What is sick? Eating brains (normal in most parts of the world) or the so called “daily limit” of cholesterol (which cultures who eat brains have been exceeding for centuries and surviving just fine)?
Dietary cholesterol has no impact on blood cholesterol and it’s actually good for you as it’s required for the production of testosterone and has many other functions as well.

And trans-fats both lower good cholesterol and increase bad cholesterol.

What makes the difference between “good” (HDL) and “bad” (LDL) cholesterol is not whether the fatty acids contained in the lipoprotein (a combination of lipids and proteins) are saturated or unsaturated, but what percent of it is fatty acids versus protein. Of course dietary cholesterol has an impact on blood cholesterol, as with everything ingested orally it takes first pass through the liver and this impacts cholesterol going out to the blood.
My grandfather once made pork brains and scrambled eggs. I knew I wouldn’t like it, but I was still obligated to try it… The stuff was so vile that after spitting it out, I wiped my tongue with a paper towel!
